Vinification & Aging:
Grape Varieties: Primarily Sangiovese with complementary grapes such as Merlot and Syrah.
Harvest: Grapes for each variety are harvested separately, typically starting in mid-September and concluding in the first week of October.
Fermentation: The destemmed and gently crushed grapes ferment in stainless steel tanks at a controlled temperature of 26-28 °C (79-82 °F). Maceration lasts about 10-12 days for Sangiovese and up to two weeks for the other varieties.
Aging: After malolactic fermentation is complete (by the end of winter), the wine is blended. It then ages for approximately 9 months, primarily in large Slavonian oak casks, with a small portion aged in barriques and stainless steel vats to preserve freshness. The wine undergoes a period of bottle aging before release.
