Vinification & Aging
- Style: The wine is crafted with a Bordeaux sensibility, aiming for complexity, elegance, and aging potential while respecting the Baja California terroir.
- Process: To build layers of complexity, the wine is fermented and aged in a combination of three different vessels:
- Stainless Steel Tanks: To preserve the grape’s natural vibrant fruit character and freshness.
- Used French Oak Barrels (500L): To add texture, body, and subtle spice without imparting overpowering oak flavors.
- Concrete Eggs: To provide micro-oxygenation that enhances mouthfeel and complexity while maintaining minerality.
- Aging: The wine is aged on its lees (“sur lie”) for several months with periodic stirring (“bâtonnage”) to develop a richer, more elegant texture.

Tasting Notes
- Appearance: A clean and bright pale straw-yellow color with silvery-green reflections.
- Nose (Aroma): Highly aromatic and complex. It presents an intense bouquet of citrus (grapefruit, lime zest), tropical fruit (passion fruit, guava), and pronounced herbal notes (rue, fresh-cut grass). This is underpinned by a distinct saline minerality and hints of smoke and white flowers.
- Palate (Taste): Dry, with a crisp and vibrant acidity that provides a refreshing backbone. The mouthfeel is elegant and almost creamy from the lees aging, creating a beautiful contrast with the sharp minerality. The finish is long, complex, and saline.
