Kiku Masamune “Koujo” Junmai: Traditional Depth, Elegant Aroma
Crafted by the historic Kiku-Masamune Brewery in Hyōgo—renowned for its dedication to the classical Kimoto method—Koujo Junmai delivers a sake that balances purity, depth, and aromatic finesse. Thanks to the brewery’s proprietary HA14 yeast, this Junmai offers a gentle lift of fruit and floral notes while preserving the dry, umami-rich profile that defines Kiku-Masamune’s signature style.
Tasting Notes
Appearance: Crystal clear with a faint pale-gold hue.
Nose: Soft, expressive aromas of melon, apple, and banana intertwined with gentle floral tones, imparted by the HA14 yeast.
Palate: Smooth, round, and delicately textured. Flavors of ripe melon and subtle orchard fruits unfold over a savory Junmai core, offering umami depth and a clean, balanced finish. A subtle richness lingers, showcasing the complexity of the Kimoto fermentation technique.
The “Koujo” Difference
Building upon Kiku-Masamune’s classic dry profile, the Koujo edition highlights a more aromatic and fruit-forward expression. The use of HA14 yeast elevates fragrance, while the Kimoto method contributes structure, body, and a refined umami presence—resulting in an elegant yet traditionally rooted Junmai sake.
