Vinification & Aging

  • Style: A robust and balanced red wine that seeks to combine the spicy fruit of Syrah with the structure of Cabernet Sauvignon.
  • Aging: The wine is aged for 12 months in French oak barrels. This process adds complexity, rounds out the tannins, and contributes elegant notes from the wood.

Technical Data

  • Alcohol (ABV): 13.8% (may vary slightly by vintage)
  • Serving Temperature: 16 – 18°C (61 – 64°F)

Tasting Notes

  • Appearance: A deep and brilliant ruby-red color, with violet hues at the rim that denote its good concentration.
  • Nose (Aroma): High and complex aromatic intensity. It interweaves notes of red and black fruits such as raspberry, cherry, plum, and cassis (blackcurrant). The barrel aging contributes elegant aromas of vanilla, chocolate, tobacco, and a light smoky touch.
  • Palate (Taste): A medium-to-full-bodied wine with good structure and tannins that are firm yet polished by the barrel aging. It has a balanced acidity that provides freshness. It confirms the fruit and wood flavors on the palate, culminating in a long and pleasant finish.

Food Pairing

This wine is an excellent companion for:

  • Grilled or roasted red meats.
  • Lamb and stews.
  • Pasta with intense red sauces.
  • Semi-cured cheeses.
  • Tacos with grilled steak (carne asada or arrachera).
